INGREDIENTS: I2 cups whole milk ½ cup granulated sugar ½ vanilla bean, split and scraped, or 1 teaspoon vanilla extract 1 cinnamon stick whole nutmeg, freshly grated to taste The zest of ¼ of an orange 6 egg yolks ½ cup heavy whipping cream 2 egg whites ½ cup dark rum For the ice bath: Fill a large bowl with ice and place another bowl on top of the ice and set aside. In a medium saucepan, heat the milk, sugar, vanilla, cinnamon, nutmeg, orange zest and egg yolks while constantly stirring until the mixture coats the back of the spoon or reaches 165°F on an instant-read thermometer. Strain the mixture into the bowl on the ice bath. In a bowl, using a whisk, whip the cream until thickened. In a separate bowl and with a clean whisk, whip the egg whites until light and frothy. Once the milk mixture is cool, whisk it into the whipped heavy cream. Mix the whipped egg whites into this mixture, followed by the rum. To serve, pour into a glass and grate some nutmeg on the top of each drink. This recipe makes 4-6 drinks depending on the size of the pour. RECIPE R2L egg nog
